There’s nothing like a BEGLT sandwich and I’ve figured out a way to make one out here on the road. It is the perfect combo of @farmlandfoods bacon, egg, guac, lettuce, and tomato. It's going to be even better on #FarmTour2022 this fall. Check out the recipe below.
Farmland’s BEGLT Sandwich
Prep time: 10 minutes
Cook time: 15 Minutes
Serves: 4
Ingredients:
1 package Farmland Hickory Smoked Classic Cut Bacon
8 slices Whole Wheat Bread
8 Bibb Lettuce Leaves
2 Large Ripe Tomatoes
1⁄2 cup Guacamole
4 Large Eggs
1⁄2 cup Mayonnaise
Directions:
1. Preheat oven to 375°F.
2. Place bacon slices on a cookie sheet lined with parchment paper and bake for
approximately 15 minutes, or until desired doneness. (You may need two cookie sheets
depending on size.)
3. While the bacon is cooking, slice the tomatoes into eight thin slices.
4. When the bacon is almost done, toast the bread.
5. Remove the cooked bacon and drain on paper towels.
6. In a large non-stick pan, fry the eggs in a little bacon fat to desired doneness, preferably
over easy.
7. To assemble: spread desired amount of mayonnaise on 4 slices of toast, top with 1/4 of the
bacon, two bibb lettuce leaves, three to four slices of tomato, one egg, then spread desired
amount of guacamole on the remaining four slices of toast and top the sandwiches.
8. Slice in half diagonally and serve immediately.
