My contribution to this weekend’s #greatmindscookottolenghi is this lovely melon medley and Buffalo Mozarella salad from Flavour. It’s so delicious and refreshing - and I wish it was on my dinner table tonight! Today it’s just as hot in Copenhagen as it is in Road Town, Tortola, where I spent some of the happiest years of my childhood. That doesn’t happen often😯 Sadly, I was too lazy to lug two big melons home from the market - instead some pretty tomatoes from France and some strawberries and raspberries from Denmark made it into my basket.
