Fried oyster mushroom with carrot mango habanero slaw
Ingredients- oyster mushrooms, mango, habanero, red onion, cucumber, red cabbage, iceberg lettuce, vegan Mayo, lemon, lime, dill, ginger, garlic, coconut vinegar, gf flour, soy milk, rainbow carrots, danos seasoning, avocado oil, scallions, sourdough rye bread
1.) for your slaw sauté 3-4 large carrots with 2 cloves garlic and a tbps of avo oil until the carrots soften
2.) remove the stem and deseed your habanero and add it to a blender with your carrot garlic and flesh of two whole mangos
3.) add juice of two limes and about 1/2 cup of vegan Mayo season with salt
4.) for your pickles thinly sliced your cucumber and get your coconut vinegar to a boil with ginger garlic and dill in the pot, pour the mixture over your cukes season with salt and place in fridge to cool
5.) for your mushrooms dry wet dry with seasoned gluten free flour and a soy milk wash fry in shallow avo oil flipping after about 7-8 minutes then cook for and additional 7-8 minutes
6.) place on paper towel for draining season with salt and danos while she’s hot
7.) assemble your sammich
