Nourish Bowl Recipe 🥑🥔🍅🥬
1. Sweet Potatoes
- 2 big sweet potatoes
- 1 tsp salt
- 1 tsp cumin
- 1/4 cup of olive oil
Cut sweet potatoes into small pieces. Place sweet potatoes in bowl and coat with olive oil. Season with salt and cumin. Cook at 425°F for 35-45 minutes.
2. Balsamic Vinaigrette (recipe from @barefeetkitchen )
- 2 tablespoons honey
- 1 tablespoon dijon mustard
- 1/2 teaspoon fine sea salt
- 1/2 teaspoon black pepper
- 1 large garlic clove minced
- 1/4 cup balsamic vinegar
- 3/4 cup extra virgin olive oil
Mix honey, balsamic, mustard, salt, pepper, and garlic. Slowly add in olive oil while whisking. Keep whisking until fully combined.
3. Cook chicken to your liking (I can do a separate video on this)
4. Cook brown rice, quinoa, or rice
5. Dress your greens with the balsamic vinaigrette
6. Add the sweet potatoes, chicken, and brown rice on top of the greens. Add your favorite toppings! Enjoy!
