Admittedly this is a far stretch for this month’s #greatmindscookottolenghi theme - cooking with fruit - but I suppose capers and lemon just make this qualify😉 I have a soft spot for the #otk potatoes on a bed of aioli (this is where the lemon comes in - this time with a sprinkle of #dukkah instead of pine nuts), and the fried capers #ottolenghi introduced me to in the infamous asparagus in #simple. Asparagus are no longer in season in Denmark but I put fried capers (and dill and butter-fried almonds/pine nuts) on so many other things - it’s an addictive topping! Here, I pan-fried a lovely slab of salmon with lemon (there it was again), capers and honey, and as a side I made a cauliflower salad with dill, mint, scallions lemon zest and juice, toasted almonds and olive oil. Not quite YO but definitely YO inspired😉 This was for my husband and daughter - I cook, and they lay the table, clear up after dinner and take photos.
