Heirloom tomato and beet salad with Babybel new plant based “cheese”
Ingredients- heirloom tomato, beets, golden beets, red onion, basil, babybel plant based, lemon, pine nuts, red wine vinegar, olive oil, balsamic glaze, salt
1.) thinly slice beets and red onion cover with a mix of 3 parts red wine vinegar and one part water season with salt and a tablespoon of sugar (allow to sit at-least an hour)
2.) for your “preserved lemons” quarter your lemons and bring to a boil in salty water SALTY.
3.) marinate your babybel with a bit of the quick preserved lemon fresh basil salt and olive oil
4.) Toss your beets tomatoes basil and baby bell in a bowl with the excess olive oil from marinating the baby bell and a tbsp of the vinegar from your pickling liquid
5.) top with your toasted pine nuts balsamic glaze and enjoy!!
