Remember to bring a container on your next walk - the countryside is overflowing with black gold right now❤️ If you’ve never made jam before, don’t worry, it’s easy. Simmer your berries in a pot with some sugar. Start with less sugar than you think you need, and add more as you go along if you think it’s too tart (I like my jam slightly less sweet than store-bought jam). The berries will release some moisture, and you might think it looks mores like soup than jam, but be patient, it will thicken! I like to add a vanilla pod and a squeeze of lemon juice (I also added some lemon zest to this batch). Scald a few jars and let them dry on a clean towel before you pour/spoon the jam into them. My favorite it toast slathered with butter and blackberry jam - and because the rest of my family thinks the seeds are annoying, I will probably have enough jam to keep me going for a month or two.
