🥩 Smoked Trisket (Tri-Tip) Sandwich 🥪
First video in a long time, have been going through some stuff. But nonetheless, was excited to get a cook in this weekend. Had a prime trip tip in the freezer so thawed it out and decided to smoke it brisket style. Trimmed off the leftover silver skin and injected with triple 9 bovine injection and marinade, then marinated it in the same solution. Not without help from my best sous chef, Maddie. Seasoned the meat with a base coat of @grillin_with_dad All Purpose and then a finishing coat of his Sweet BBQ rub. Onto the @kamadojoe running with @fogocharcoal and @jealousdevilcharcoal Cherry Wood Chunks. Ran between 220-250 degrees for about 3.5 hours until it hit 165 degrees internal. Then wrapped in foil with butter and beef tallow and placed back on the grill for another 2 hours until it hit 203 internal. Rested for one hour before slicing. Made a simple sandwich using fresh sourdough rolls from my local @jewelosco, some @kindersflavors Founders Reserve BBQ Sauce and a little bit of @hellmannsmayonnaise Mayo. The meat stayed nice and juicy and was super tender.
