Vodka rice noodles with Panko fried eggplant Ingredients- rice noodles, eggplant, San Marzano tomatoes, heirloom tomatoes, vodka, coconut milk, parsley, basil, white onion, garlic, panko, spicy Dan o’s, gf flour, olive oil, crushed red pepper 1.) For your eggplant cut into cubes generously salt then set aside for 30min to sweat, wipe off excess moisture dredge in gf flour - plant milk and finally your panko (seasoned with spicy Dan O’s). Shallow pan fry in olive oil until gold salt once more and set aside. 2.) For your sauce mince one white onion and thinly slice 3 cloves garlic place in your pan with 1 heaping tbps of red pepper flake salt and 1 tbps olive oil. Add your 2oz vodka once the onion is translucent, cook out the liquor before adding your can of San Marzano (make sure to crush with your hands) add in a touch of coconut milk cheffonade basil and your diced heirloom tomatoes to finish. 3.) Make sure to cook your noodles Al dente and allow them to cook in the sauce a good 3minutes before serving.
