Crispy, flavourful baked carrot fries - the most delicious way to get those veggies in! These fries are slightly addictive, but totally good for you, and super easy to make. Carrot fries: 1 lb carrots, cut into uniform fry shape 2 tbsp avocado oil 1 tsp sweet paprika 1 tsp garlic powder 1/2 tsp sea salt 1 tsp fresh thyme leaves, minced 2 tbsp arrowroot powder Fresh thyme leaves and flakey sea salt for garnish Paprika Garlic Aioli: 1/2 cup avocado oil mayo 2 tsp lemon juice 1 tsp dijon mustard 1-2 clove garlic, grated 1/4 tsp sweet paprika 1/4 tsp smoked paprika Dash or two of cayenne powder (optional) Sea salt to taste 1. Preheat oven to 425F and line two baking sheets with parchment paper. 2. In a large bowl, combine carrots, oil, paprika, garlic powder, salt, thyme and arrowroot. Toss well to evenly coat the carrots. 3. Divide the carrots between the baking sheets and spread into an even layer. Make sure you leave some room between them to allow them to get crispy. 4. Bake in the preheated oven for 15 minutes and then flip. Return to the oven for 5-10 minutes or until carrot are fork tender and crispy on the outside. 5. While the carrots bake, make the aioli. Combine all the ingredients in a bowl or wide jar and stir to combine. Taste and adjust seasoning to taste. 6. To serve, sprinkle carrot fries with fresh thyme leaves and flakey sea salt. Serve with the paprika garlic aioli or your favourite dip!
