I’ve been making these courgette fritters most weeks recently and Aurelia is loving them! They’re so quick and easy to make, plus they’re perfect for picnic lunches in the park! 🙌🏻☀️ You can add extra veggies such a grated carrot or sweetcorn if you have any, but for these I used.. 2 medium courgettes grated A handful of grated Parmesan 2 tablespoons of self raising flour You could add more flour or an egg to help bind everything together if needed.
