Lunch #1: Pizza Quesadillas🍕🍅
Ingredients: 1 corn flour tortilla, 1⁄4 cup fody sauce, 1⁄3 cup mozzarella cheese and 1⁄2 cup spinach
Cooking instructions:
✨Put sauce, cheese and spinach in tortilla and cook in greased skillet over 5 minutes
Snack: 1 sliced apple with 2 tbsp sunflower butter, 1⁄3 cup mixed seeds and raisin mix
Gut love fact: Spinach is an easy way to introduce leafy greens into your kids lunches with minimal complaints! They'll go wild for this pizza quesadilla and get a little boost of fiber to boot.
Lunch #2: Salsa Snack Box🥕🥒
Ingredients: 1⁄2 cup cassava flour tortilla chips, 5 carrot sticks + 5 cup cucumber slices to dip in 1⁄4 cup salsa.
Snack: 5 fresh strawberries cut up with DIY uncrustable with 2 slices GF bread, 2 tbsp sunflower butter and 1⁄3 cut up banana.
Gut love fact: Sunflower butter is an allergy-friendly, protein power-up that's a total hit with kids! With all the joy of a PB&J but classroom friendly - your kids are going to love this.
Lunch #3: Nut-Free Chicken Nuggets🐔❤️
Ingredients: 1 lb chicken, 1⁄4 cup GF flour, 1⁄4 tapioca flour, 2 eggs dipped in 2 tbsp ketchup (will serve about 1⁄3 of this recipe for lunch)
Cooking instructions:
✨Preheat the oven or air fryer to 400 degrees and line a baking sheet
✨In a small bowl, whisk together the eggs
✨In another bowl, mix together flours and spices so everything is evenly combined
✨Using a fork or your hands take a piece of the chicken and dip it into the egg, letting the egg drip off a bit
✨Then take that piece of chicken and dip it into the flour mixture, pressing it down to make sure the flour is coated all over
✨Add chicken to the baking sheet, repeat for the rest
✨Bake in the oven and air fryer for 10/12 minutes then flip chicken over and cook another 10 minutes
Snacks: 1/4 cup blueberries, 1 standard size string cheese and 5 slices each cucumber and carrots.
