INGREDIENTS
1 8.8-oz package @barillaus Chickpea Spaghetti
Kosher salt
1⁄4 cup extra-virgin olive oil
4 garlic cloves, minced
2 tablespoons capers, drained
1⁄2 teaspoon chili flakes
1⁄2 cup finely chopped parsley
1⁄2 cup finely chopped basil
2 4-ounce burrata balls
Lemon zest, for garnishing
METHOD
1. Bring a large pot of abundantly salted water to a boil. Add the pasta and cook to just al dente, about 1 minute less than the package’s directions. Reserve 1 cup pasta cooking water and drain the pasta.
2. While the pasta is cooking, heat the olive oil in a large skillet over medium heat. Add the garlic, capers, and chili flakes, and cook, stirring frequently until the garlic softens and starts to turn golden, about 2 to 3 minutes. Reduce the heat to low and keep warm.
3. When the pasta is cooked, increase the heat under the garlic-caper mixture to medium high and stir in the parsley, basil, drained pasta, and 1⁄4 cup pasta cooking water. Gently toss and cook, adding more pasta water as needed, until the sauce coats the pasta and the pasta reaches al dente, about 1 to 2 minutes.
4. Transfer the pasta to a shallow serving bowl or individual plates and garnish with burrata, lemon zest, and an extra drizzle of olive oil, if desired. Enjoy immediately!
