Fiesta potatoes Ingredients- potatoes, white onion, carrot, red green yellow and orange bell pepper, white kidney bean, beer, nutritional yeast, Dijon, not milk, lemon, avocado oil, cassava flour, paprika, cumin, white pepper, black pepper, garlic powder, cayenne salt, chives, vegan cheese (I used violife Mexican shreds), vegan sour cream (kite hill = the best) 1.) Cut all your tatos into some rustic cubes hit em with 2-3 tbps of avocado oil salt and season with your spices - paprika, cumin, garlic powder, white pepper, black pepper, and just 1/4 cup of cassava flour to coat 2.) Air fry them twice at 350 for a total of 40 min 3.) For your bean beer cheese sauté one whole white onion with 3-4 carrots depending on size a little avo oil and salt, once the onions are translucent hit it with one whole beer, allow it to cook down half way before adding your can o beans 4.) Blend your bean mix with 1/4 cup nutritional yeast 2 tbps dijon, 1/2 cup not milk, and just a touch of cayenne depending on your spice preference 5.) Add your blended sauce back into the same pan place in your peppers juice of one whole lemon and fold in 1 cup of your fav vegan cheese, season once more with salt 6.)
