Egg salad with skyr? Yes, please! I’m not a big mayo salad type so I like to replace it with skyr for fresher taste. Find the recipe below 🐓🥚🥪 🍃 Making food and working on children’s fine motor skills at the same time is a win-win in my books! Have your child help with peeling the eggs and cutting the chives with scissors, stir the skyr and mustard together and assemble their own sandwich. 4 eggs 1⁄2 cup plain skyr 2 tsp mustard 1 tbsp chives, finely chopped 1⁄2 tbsp dill, finely chopped Salt & pepper Fresh lemon juice 1. Place the eggs in a pot and cover, by an inch or so, with cold water. Bring to a rolling boil. Then, with the lid on the pot, turn off the heat and let the eggs cook in the hot water for 10 minutes. 2. Fish the eggs out of the pot and immediately place in ice water for 15 minutes. 3. Peel the cooked eggs and chop. 4. Stir together skyr, mustard, and herbs.
