healthy salmon patties - I almost always have canned salmon in my pantry, so if I need something easy that’s still going to be nutrient dense, I love making these! And don’t underestimate canned salmon🐟! It’s affordable, convenient and an easy way to eat this nutritious fish that’s high in omega 3, but low in mercury. 2 5-6 oz cans wild salmon, drained (I like @raincoasttrading) 1 egg 2 tbsp thinly sliced green onion 1 tbsp parsley, finely chopped 3 tbsp avocado mayo 1 tsp dijon mustard 1 tbsp fresh lemon juice 5 tbsp almond flour 1/2 tsp sweet paprika 1/2 tsp garlic powder 1/2 tsp sea salt, or to taste Freshly ground black pepper, to taste Avocado oil, for frying Add drained salmon to a bowl and flake with a fork (you don’t want any large pieces or the patties won’t hold together well). If using canned salmon with bones, mash larger bones with a fork. Add the remaining ingredients and mix well. Scoop out 1/4 cup of mixture and shape into patties. If your mixture is too wet to form patties, add a little more almond flour Heat a cast iron skillet over medium heat and add 1 tbsp avocado oil. Working in batches, cook the patties 3-4 minutes per side or until golden brown. Serve with fresh lemon and a dip if desired (I like to mix avocado mayo or greek yogurt with grated garlic and fresh lemon juice!) #salmonpatties #cannedsalmon #healthylunchidea #highproteinlunch
