Get ready for thick, fluffy dough topped with melty, crispy cheese and plenty of fun flavor combinations! Coming from Osaka (the carb city of Japan), I instantly fell in love with Detroit-style pizza the first time I had it, and knew I’d love to one day put my own special twist on it. Enter Kōbo Pizza: inspired by my cooking experience in both Japan and Seattle my team and I have been hard at work on a completely unique mochi flour and koji based dough, expertly infusing my Japanese roots into the flavors of these crispy, crusty rectangular pies. Starting today September 10, we’ll be slinging pizzas of the highest quality right inside Redhook Brewlab.
