CHOCOLATE PEANUT BUTTER PROTEIN BARS ✨ Here’s your sign to make your own protein bars at home so you can enjoy the perfect healthier snack during the week. This version is one of my absolute favourites, because nothing quite beats chocolate and pb😍 Ingredients: 1 cup oat flour 2 tbsp ground flaxseed 1/2 cup vanilla protein powder 1 tsp ground cinnamon 1/4 tsp sea salt 1/2 cup natural peanut butter 2-3 tbsp maple syrup 2 tbsp melted coconut oil 1 tsp vanilla extract 2 tbsp milk of choice, plus more as needed Topping: 1/4 cup dark chocolate chips 1 tsp coconut oil 1. Add all the base ingredients to a bowl and use a rubber spatula or your hands to mix well. Add an additional 1 tbsp of milk at a time until the mixture is like a thick cookie dough. It should easily stick together when squeezed in your hands and shouldn’t be too dry, however don’t make it too wet or they won’t hold together. How much milk you use will really depend on the type of peanut butter and protein powder that you use. 2. Add to a bread loaf pan lined with parchment paper and press down firmly. Melt chocolate chips and coconut oil together and spread onto the base. 3. Place in the fridge for at least 30 minutes to set. Remove from the fridge, sprinkle with flaked sea salt if desired and cut into bars. Store in the fridge until ready to eat (I like to take one out of the fridge about 5-10 minutes before eating so it softens up a little bit).
