high protein candy cane fudge truffles (gluten & dairy-free) πŸŽ„πŸ€ŽπŸ«ΆπŸΌπŸŽ 1/4 cup pumpkin puree or unsweetened applesauce 1/2 cup cashew butter (or other nut/seed butter) 1/4 cup cacao or cocoa powder 1 tbsp avocado oil or coconut oil, melted 2 tbsp maple syrup Pinch of pink salt 1/2 cup vanilla protein powder 1 tsp peppermint extract Topping 3/4 cup dark chocolate chips 1 tsp coconut oil 1 candy cane, crushed Add all of the ingredients for the truffles & roll into balls. Place on a parchment paper lined plate & chill in the freezer while you make the topping. Melt the chocolate chips with the coconut oil over low heat on the stove or in 30 second intervals in the microwave stirring after each one until the mixture is melted, careful not to burn. Dip the chilled balls in the chocolate to coat using a spoon. Top each with crushed candy cane pieces & chill until for about 45 minutes in the fridge.
