Happy pumpkin season!! I look forward to this time all year and then it goes so fast, so let’s take advantage. Here are 3 of my favorite recipes you can make using one can of pumpkin puree! 🧡 PUMPKIN PROTEIN ENERGY BALLS 1 cup nut butter (peanut butter would be good! I used granola butter- so yum) 1/4 cup pumpkin puree 1 tbsp pumpkin pie spice or cinnamon 1 tsp vanilla extract 1/4 cup maple syrup 3 tbsp coconut flour 2 scoops vanilla protein powder Combine all ingredients in a bowl. Scoop onto parchment lined baking sheet and freeze for at least 30 mins. Meanwhile, melt dark chocolate with 1-2 tsp of coconut oil. Dunk balls in dark chocolate and top with flaky sea salt. Refreeze to set for ~10 minutes, and then store in your fridge for the week! 🧡 PUMPKIN CHIA SEED PUDDING -1 cup coconut milk -1/2 cup pumpkin puree -1/4 cup Greek yogurt -2 scoop protein powder -1 tsp vanilla -2 tbsp maple syrup -1/4 cup chia seeds Blend everything besides the chia seeds together. Add chia seeds to your meal prep container, then pour liquid on top. Stir immediately- the chia seeds will get sticky. I like to leave mine out for about 15 mins before refrigerating, stirring occasionally. It should thicken up before refrigerating! Serve the more Greek yogurt, cinnamon sautéed apples, granola, honey, etc. 🍯 🧡 CHEESY PUMPKIN ALFREDO SAUCE - 3 tbsp butter - 2 cloves minced garlic ~ 1/2 can pumpkin (I used 4 big scoops) - 2/3 cup cream or half and half - 1/2 cup grated Parmesan cheese - salt and pepper to taste - noodles of choice (the GF @jovialfoods mafalda pasta was perfect) Melt the butter and garlic in a saucepan together. Add the pumpkin and whisk, and then add the cream and whisk together. Add the Parmesan and combine. Season with salt and pepper, and let the sauce simmer while you make your noodles. Reserve 1/4 cup pasta water before straining. Combine pasta with sauce and add pasta water, more Parmesan and red pepper flakes. Enjoy!!
