currently prepping this sweet potato bake for the second week in a row 🍠✨🌿 Ingredients: - 1 lb lean ground beef - 1 onion (red, white or yellow), diced - 2 cloves garlic, minced - 2 sweet potatoes (or 1 extra large), diced - 4 small zucchini, diced - 1 tbsp Italian seasoning - 1 tsp smoked paprika - Salt & pep to taste - 1/4 cup fresh parsley, diced (plus extra for garnish) - Cheese (I used parm) Instructions: 1. Start by cooking ground beef, garlic and onion until onion is translucent 2. Add diced sweet potato, zucchini, and spices 3. Cover, and cook on medium-low until veggies are soft (approx 15 minutes, stirring occasionally) 4. Add fresh parsley, transfer to a baking dish and bake at 450 for approx 15-20 minutes 5. Top with grated cheese and broil for a few minutes until brown 6. Garnish with parsley & enjoy!
