VEGAN CHOC CHIP PUMPKIN BREAD🤤 Can’t get enough of this one!!

Ingredients:
1 cup pumpkin puree (homemade recipe in my story highlights)
60ml (1/4 cup) maple syrup
1/3 cup coconut sugar
80ml (1/3 cup) plant-based milk
1 tsp vanilla extract
2 cups spelt flour
2 tsp baking powder
1/2 tsp baking soda
1 tsp cinnamon
1-2 tsp pumpkin spice
1/4 tsp salt
1/2 cup vegan chocolate chips
Method:
1. Preheat oven to 190°C fan-forced and line an 8.5 x 4.5 inch loaf pan with baking paper.
2. In a large mixing bowl whisk together the pumpkin puree, coconut sugar, maple syrup, vanilla and milk. In a separate bowl sift together the flour, baking powder, baking soda, spices and salt. Add dry ingredients to the wet and combine well. Fold through the chocolate chips.
3. Transfer mixture to the prepared loaf pan and bake for 35-40 minutes, until a toothpick inserted into centre of the loaf comes out clean. Transfer to a cooling rack for 30 minutes before slicing.
- This recipe is refined sugar free, oil-free + nut-free. If you prefer to use oil in your baking or want the loaf to keep moist for longer, add 1/4 coconut oil to the batter.
- To make GF try buckwheat flour or GF baking mix and you can swap the sweetener for other kinds. My ebook has lots of info on baking and substitutes to help you!
