Tuna is one of my go tos. Not only is it delicious to me, it’s fast, easy, and super affordable. I remember taking this to lunch in elementary & everyone staring like “wth is that?” 😂 never took it again lol bc you know, peer pressure. But truth is, if it wasn’t for the mercury I would eat it all the time 🤷🏽‍♀️ INGREDIENTS & TIPS: 1. Can of tuna (your choice) I recommend the one in oil vs water only bc the one in water tends to be more dry to me. I super drain it, using my hands. 2. Canned corn (I used half of a 15.25 oz but if you can find the small 341 ml that’s a perfect amount) also drained 3. Quarter piece of cabbage, washed & super drained. (You can use lettuce also, but cabbage has a better crunch to it) 4. 1 large Roma tomato diced 5. Not too big cucumber peeled, and diced. 6. Diced jalapeño (you can use pickled jalapeños but rn w/my acid reflux I can’t do those) 7. Half lime 8. Salt (pepper is optional, I didn’t grow up adding pepper so I don’t add it personally) 9. Mayo 10. Eat with saltine crackers, tostadas, or in a sandwich! Con Tapatio, duh. (You can add onion as well, I just don’t.)
