[ad] Are you looking for the perfect seasonal autumn salad? Well, I think this is it! This Yondu kale, lentil, apple and walnut salad is hearty and filling and can be made ahead too which is great. The combination of sweet, sharp, bitter and umami flavours is perfect for this time of year! Honestly, it is so tasty! I’m using @Yondu.uk Vegetable Umami again as it works brilliantly in a salad dressing to enhance the flavours of the salad. It also slightly reduces the bitterness of the kale. I’ve also added @Yondu.uk Vegetable Umami to the pan while cooking the lentils which adds loads of flavour without needing any other seasoning. By the way, you can also add it to other grains to add flavour while cooking! To make this salad to serve 2 as a main meal you’ll need: 130g kale 110g lentils 80g walnuts 1 1/2 apples 1 tsp grated root ginger 2 tbsp white wine vinegar 2 tbsp extra virgin olive oil 1 tbsp maple syrup 1 tbsp Yondu Vegetable Umami First cook the lentils. You need to rinse them well first and check there are no little stones among them. Put them in a pan and cover them with water about so there is about a centimetre of water above them. Add a tablespoon of Yondu Vegetable Umami and simmer for about 20 minutes till they are cooked through. Drain any excess water afterwards but don’t rinse them. Mix together all the ingredients for the dressing. Cut the woody stem out from the middle of each kale leaf. Put the kale in a bowl and pour about half the dressing over the top. Massage the dressing into the kale with your hands for a couple of minutes. This helps to tenderise the kale so it can be eaten raw and also helps the dressing to flavour it.
