The chicken: -lots of salt and pepper -add avocado oil to a pan and cook on medium-high heat - 6 minutes on each side -set aside and slice into cubes The sauce: Combine... -1/4 cup fresh orange juice (or the juice of one full orange) -Zest of one orange -1 + 1/2 tablespoons soy sauce, gluten free soy sauce or coconut aminos -Freshly grated ginger (approx 1 inch knob) -1/2 tablespoon honey (or more for added sweetness) -Scallions Once the chicken is cooked, add your sauce to the same pan. Cook for about 10 minutes, stirring every minute or so. You want it to bubble and thicken. Add chicken back in and mix. Then add chicken to a bed of brown rice and top with sesame seeds.
