We’re sure you’ve seen this recipe all over Tiktok and Instagram, and said to yourself “wow that looks SO good but one bite of this and i’ll be bloated for a week.” We’re here today with a gut-friendly version of the viral #CowboyCaviar so that you and your friends can enjoy this dish poolside and feel amazing afterwards (did someone say: NO BLOAT ZONE?!) 🤩✨ INGREDIENTS 1/2 cup walnuts, roughly chopped 1⁄2 cup chickpeas, drained & thoroughly rinsed 1⁄4 cup canned corn, drained 1/4 cup red bell pepper, diced 2 Tbsp jalapeno, deseeded & finely chopped 1 Roma tomato, finely chopped 1⁄4 cup green onion, sliced (green parts only) 1/3 cup cilantro, chopped 1/4 of a small avocado, diced Salt & black pepper, to taste INGREDIENTS for the dressing 1⁄4 cup Fody’s Medium Salsa 1 Tbsp Fody’s Shallot-Infused Olive Oil 1-3 tsp lime juice COOKING INSTRUCTIONS: Mix together all the salad ingredients and then make the dressing. Pour the dressing over the salad and mix all together.
