SPINACH ARTICHOKE DIP - a bubbly cheesy appetizer that will wow your guests, it’s so simple to make, it’s creamy, satisfying and delicious
Ingredients (6 servings)
2 tablespoons butter
2 tablespoons flour
1 3/4 cup milk
2 garlic cloves, minced
13.75 oz or 390 g canned artichokes, roughly chopped
1 can or handful of spinach, fresh, or thawed and drained (use the artichoke can to measure the spinach)
50 to 80 g grated sharp cheddar cheese, low moisture mozzarella cheese or any other cheese of choice, plus more for topping
50 grams blue cheese, mascarpone, or any similar creamy cheese
A big pinch of kosher salt
1/4 teaspoon cayenne
Instructions
1. Add the butter to a pot over medium heat. Wait for it to sizzle, then add the flour and stir to combine. Allow the flour to brown for 2 to 3 minutes.
2. Slowly incorporate the milk while whisking the flour and butter together. Whisk and allow it to come to a simmer. The sauce will start thickening.
3. Once the mixture has a texture similar to buttermilk, turn the heat to low and toss in a big pinch of salt, artichokes, spinach, garlic, cheese, and cayenne.
4. Stir everything together until the cheeses are melted.
5. Pour the dip in a ceramic baking dish and place it over a baking sheet or tray. Sprinkle a handful of grated cheese on top and broil in the oven until the cheese is melty and bubbly.
6. Carefully take it out and serve it right away.
