Between Thanksgiving and weekends filled with holiday parties, we figured you might need a break from all those heavy holiday meals. So we whipped up this delicious Warm Winter Squash Salad that strikes that perfect balance between light & refreshing and winter warmth. Check out the full recipe below ๐Ÿ‘‡โ€‹ โ€‹Prep time: 10 minutes Cook time: 30 minutes Serves: 2-4 Ingredients: For the salad: 1 8oz pouch Daring Original Plant Chicken 5 cups baby kale 3 medium carrots, halved 2 zucchinis, sliced 1 cup crispy chow mein noodles For the dressing: 1/3 cup rice vinegar 1/4 cup hoisin sauce 2 tablespoons canola oil 1 1/2 tablespoons soy sauce 1 tablespoon fresh ginger, grated 1/2 teaspoon toasted sesame oil 1 tablespoon honey Method: 1. Heat a frying pan on medium-high heat. Drizzle with 1-2 tbsp cooking oil and sear the Daring Original Pieces for 2-4 minutes per side. They are done when they have a nice golden-brown color to them. 2. Halve the carrots. Then quarter the zucchini lengthwise and cut into 1/2-inch-thick slices. Lightly oil a baking sheet and roast at 450 degrees for 25 minutes. 3. In a medium bowl, whisk together vinegar, hoisin sauce, canola oil, soy sauce, ginger, and sesame oil until combined. 4. In a salad bowl, add baby kale, then Daring, carrots, and zucchini and chow mein noodles. Top with dressing and enjoy!
