CORN FRITTERS - are one of my favorite things to make with fresh corn, they’re quick, easy to make and so delicious. Serve them with a dollop of yogurt and a poached egg on top for a decadent breakfast
Ingredients (6-8 fritters)
4 small corns, kernels cut off
2 shallots, finely chopped
2 to 3 jalapeños, fresh or pickles, finely chopped
5 thai chiles, finely chopped, optional
1/4 cup chopped fresh parsley
100 grams grated cheddar cheese, or any other similar cheese
3 eggs, can be substituted with flax eggs
1/2 cup ricotta or cottage cheese
1 cup all purpose flour
1 teaspoon baking soda
A big pinch of salt
Butter and oil for frying
Instructions
1. Add the kernels, shallots, jalapeños, Thai chiles, parsley, cheddar cheese, ricotta and eggs in a bowl. Mix until combined.
2. Season with a big pinch of salt. Add the flour and baking soda and roughly mix until combined.
3. Add a knob of butter and a drizzle of oil to a well-seasoned cast iron skillet or a non-stick pan over medium heat. Add a dollop of batter for each fritter. Cook on each side until golden brown, for about 2 to 3 minutes per side.
4. Repeat the previous step until you run out of batter.
5. Serve on their own, or with a dollop of sour cream or yogurt on top and a poached egg.
