10-MINUTE BREAKFAST BOWL - one of my favorite quick, easy, and delicious breakfast recipes. It’s so satisfying, truly the perfect way to start your day.
Ingredients (1 serving)
4 to 5 slices of halloumi
1 egg, cooked to preference
A handful of cherry tomatoes
A small shallot, finely chopped
1/2 jalapeño, optional
4 olives, finely chopped
Extra-virgin olive oil
Lemon juice
1/2 avocado, thinly sliced
2 dollops Greek yogurt
1 garlic clove, minced
Salt
Bread for serving
Instructions
1. Heat a drizzle of olive oil in a cast iron skillet on medium heat. Sear the halloumi for 1 minute on each side, or until golden brown.
2. In a bowl, combine the tomatoes, shallot, olives, jalapeño, a pinch of salt, a drizzle of olive oil and a squeeze of lemon juice.
3. Combine the yogurt, garlic and a pinch of salt in the serving bowl. Top with avocado, tomato salad, fried halloumi and egg.
4. Serve right away with some bread on the side.
