PAGO: A vineyard “neighborhood” or area. Several vineyards make up each Pago. Above is pago Balbaina Baja, technically now residing in El Puerto De Santa María, one of my favorite places on earth. An exciting focus currently on “pagos” is a return to or recovering of old traditions dating back hundreds of years to when locals identified the wines of the region by vineyard and pago, not just by grape or by style, as each pago carries with it its own reputation and history of quality soils and vines.
