Bartender Spotlight: Kyra x Happiness Forgets Distiller by day, bartender by night @kyra_the_bartender’s career started 10 years ago, with her interest in cocktails peaking while she was working at a champagne bar in Manchester. She's now based in London at the beautiful Happiness Forgets (@happiness_hoxton )bar where the focus is on the classics with very specific methodologies in preparation. Kyra is currently training to be a distiller in order to further understand the spirits she uses in her creations. When asked of the future of her career path she explains how she would like to stay in the mixology world describing it as the “best part of the last 6 years of my life”. When it came to developing her twist on the classic G&T, Kyra wanted to hold on to the summer feeling while also embracing the winter period. Using Bombay Citron Pressé, lemon juice and mint to symbolise summer, honey syrup and Amontillado sherry for winter and finally marrying it together with some tonic water, Kyra manages to encapsulate the brightness of summer and the coziness of winter into one perfect sip!
