I used to visit Cactus Club all the time and order the Bandara Salad😍 I know you might be thinking SALAD?! But trust me, if you’ve tried the Bandara Salad it’s no joke.
Now, it’s been off the menu for quite some time, but lately I’ve had a hankering for it! So, I HAD to recreate it and I think I nailed it! Ingredients listed below!!
Cajun seasoning: (if including salmon)
1/2 tsp Chili powder
1 tsp paprika
1/4 tsp of cayenne
1/4 tsp onion powder
1/2 garlic powder
1/2 tsp oregano
1/2 tsp salt
1/4 tsp of pepper
Vinaigrette:
1/4 cup extra virgin olive oil
1/2 tbsp Dijon mustard
Juice of 1 lime
1 clove of garlic
1 tbsp of white wine vinegar
3 tbsp of honey organic 2 rivers
2 tbsp of vegan mayo
Salad:
2 heads of romaine
1 red pepper
1 cup of frozen corn defrosted
1 cup of feta
Salmon with Cajun seasoning
3/4 cup of chopped dates
Chow mien noodles (the best part)
