I’ve been slowly running out of Vietnamese pickled carrot and daikon (Đồ Chua) and today there was a pile of gorgeous daikon radishes on sale at my local asian supermarket so I took it as a sign to make some more! I know I’ve shared this in stories so many times over the years but I thought it needed it’s own place in my feed. Save this recipe and it’s yours forever! ✨🥕
You’ll need:
1 medium daikon radish
2 large carrots
4 cups warm water
3-5 tbsp sugar
1 1/2 tbsp salt
1/2 cup vinegar
