Ingredients:
• 4 cups water
• 2 cups long-grain rice
• 1 cinnamon stick
• 1 star anise
• 2 cloves
• 3 tbsp Mexican cocoa powder
• ⅛ tsp cayenne or chili powder
• Pinch of salt
• 1 12-oz can evaporated milk
• 1 8-oz can media crema
• 1 14-oz can sweetened condensed milk
• 1 tsp vanilla extract
• Cinnamon powder (optional)
Preparation:
1. Rinse rice until water is semi-clear.
2. In a pot, combine water, rice, cinnamon, star anise, and cloves. Cook 15 min until water evaporates.
3. Stir in cocoa, cayenne, and salt.
4. Add evaporated milk, media crema, condensed milk, and vanilla. Cook 5 min. to desired consistency.
5. Serve warm or cooled, topped with cinnamon.
