The summer of non cooking continues at my house. Eggplant slices cook in the microwave & then in the air fryer all in less than 30 min. Sweet, savory, & smokey eggplant bacon goodness is the way to go. Enjoy!!
Recipe for Eggplant Bacon
1 small globe eggplant, 3 T neutral oil, 1 T red wine vinegar, 1 T maple syrup, 1 tsp Dijon mustard, 1/2 tsp each of garlic powder, smoked paprika, liquid smoke, & sea salt, 1/4 tsp freshly cracked black pepper
✅ Slice eggplant: cut in half through length, cut one of the halves in half again through length. The quarter piece will be used to make the bacon strips. Save the rest of the eggplant for another use or to make more batches of eggplant bacon
✅Slice eggplant approx 1/4 thin through length using a sharp knife or mandolin. Approx 7-8 slices
✅Using a microwave, place slices on microwave safe tray lined with double layered paper towel on the bottom/top of eggplant. Place a heavy plate on top of paper towel. Heat on high 5-7 min.
✅ Meanwhile, mix the marinade ingredients in a small jar, shake until emulsified
✅ Add 1/2 marinade to the bottom of an oven safe casserole dish/Pyrex, in an even layer add eggplant slices, brush/ pour the rest of marinade on top of slices, make sure slices are well coated
✅Air fry slices for 10 min at 370 F, flipping half way through.
✅ Carefully transfer slices to foil & air fry for another 5 min till crisp at ends. Enjoy with breakfast,cut up as a salad topper, or my favorite an Eggplant BLT as seen in this reel
