Roasted red pepper pasta: Ingredients: - 1lb pasta of choice - 16oz can roasted red peppers drained - 3 cloves of garlic minced - 1/2 shallot chopped - 1/2 c chicken stock - salt - pepper - 1/2tbsp Italian seasoning - 1/2c heavy cream - 1/2 can tomato paste - red pepper flakes - 2tbs butter - basil - 1/2c shredded parmesan cheese Directions: - Bring a pot of water to a boil. - In a blender or food processor combine roasted red peppers, garlic, chicken stock, shallots, Italian seasoning, salt, and pepper. Blend until smooth. - Melt the butter in a pan over medium heat. Add shallots, red pepper flakes and cook for a two minutes while stirring. Add in the tomato paste and stir until combined with the shallot mix. Pour in the roasted red pepper sauce. Stir and cook for two minutes. Add in the heavy cream, stir and let sauce come to a boil then simmer on low for 10 minutes. - Add in pasta, feel free to add pasta water to thin out the sauce if needed. - Remove from the heat, add in the parmesan cheese.
