Noor’s and Ottolenghi’s new cookbook ‘Extra Good Things’ is coming out at the end of this month. I can’t wait to get their new cookbook and while I wait they are teasing us with the first recipes from the book. @Noorishbynoor and @ottolenghi made this Parmigiana pie with tomato sauce and kadaifi topping in their latest YouTube video. See the second picture for a slice with extra tomato sauce 😋😋. This dish is a Middle Eastern twist on the classic Italian dish parmigiana di melanzane or melanzane alla parmigiana. You want to know what the ‘extra good thing’ about this recipe is? It’s a fabulous tomato sauce with spices like chili flakes, cumin, cinnamon and fresh coriander. You make some extra sauce while you are at it and repurpose it in recipes like a saganaki or shakshuka. Both amazing dishes too ❤️. Three for the effort of one...... Perfect for busy evenings...... I love how the recipe coats and roasts the aubergine before you add them to the dish. The aubergine is crunchy on the outside and melts in your mouth on the inside.
