Smashed Chickpea & Avo Melt
Perfect day for this summer sammie! A follower and family favorite!!
🌱My favorite chickpea salad, elevated with all the melted vegan mozzarella cheese on a slice of crispy sourdough. How does that sound? Pretty perfect imo
🌱What you need: 1 can of chickpeas (15 oz rinsed & dried), 1/2 cup red onion finely diced, 1/4 cup fresh herbs finely chopped (I used parsley & dill) 1 mini cucumber finely diced, 1 garlic clove grated, 2 tsp red wine vinegar, 2 tsp Dijon mustard, 3 T vegan Mayo, 1 T sweet pickle relish, kosher salt/pepper to taste
🌱For 1 sandwich: 1 slice of toasted sourdough, 1/2 avocado sliced, 2 slices of tomato, 2 slices of vegan mozzarella. Toppings: drizzle of olive oil & extra herbs
Salad approx 2-3 servings
🌱In a mixing bowl, mash chickpeas till flakey using a potato masher/back of fork
🌱In a small dish grate garlic into vinegar. Let sit 2 min
🌱meanwhile combine the rest of ingredients, and garlic/vinegar, salt/pepper to taste
🌱Brush bread with olive oil, toast till golden
🌱construct sandwich: layer sourdough with sliced avocado, tomato, & vegan mozzarella. Bake at low heat in oven/toaster oven till cheese melts. Put under broiler - 1-2 min for cheese to brown & extra crispiness.
