INGREDIENTS
- 2 Portabello Mushrooms
- 1 Zucchini
- 1 Onion
- 1 Red Bell Pepper
- 1 Green Bell Pepper
- 1 Yellow Squash
DIRECTIONS
1. Preheat grill to medium heat π₯, 350 to 450 degrees.
2. Trim the ends of the zucchini, yellow squash and onion into 1/2 inch slices. Remove seeds Keep those grills going π₯ π₯ π₯
3. Drizzle veggies with olive oil and sprinkle evenly with salt + pepper. Grill the veggies with lid closed until tender and lightly charred all over, approx.
- 8 min for Bell Peppers, Onion + Mushroom
- 6 min for Yellow Squash + Zucchini
4. Serve warm or at room temp.
