Armenian Beef & Potato Stew
In my search for the origins of this recipe, I came across many variations from Russia, India, and even Iran. What makes this recipe unique is its simplicity. The other recipes had more complex flavor profiles and spices with curries and the Russian version is with parsley and green onions. My grandmothers recipe seems to have more Armenian flavors such as red pepper paste, tomato paste, red basil, Aleppo pepper. It’s almost as her journey was. Lots of Syrian influence with the Aleppo pepper as my grandmother was a child of genocide survivors who lived in Aleppo. Without further ado, here’s the recipe.
Ingredients
1 pound of grass fed lean beef chunks
4-6 small golden potatoes (organic)
1/4 large golden onion
1 tablespoon red pepper paste
1 tablespoon tomato paste
Avocado or olive oil
Dried red basil
Salt and pepper
1/2 teaspoon Aleppo pepper flakes
1 green pepper (not pictured here)
Start of by sautéing your onions in oil until translucent (medium heat).
Add beef and lightly brown (covered for few minutes and then each side)
Add potatoes and cover
Mixing and adding seasonings
Mix your tomato and pepper paste with hot water until you have a thick sauce
Add red basil
Pour over potatoes and meat mixture
Mix and add in water to cover
Add seasonings, cover and simmer on low for 1 hour.
Serve with fermented veggies , olives, (gluten free for me) bread and cheese •
