Tis’ the season for holiday gatherings ❄️ and we’ve got just the thing for you to bring: Cajun Plant Chicken Croquettes. These potato croquettes are crispy on the outside, soft on the inside, and loaded with our Cajun Plant Chicken pieces, giving them just the right amount of bite that will keep everyone coming back for more. Makes 14-18 croquettes
Potato Dough Ingredients:
1 8 oz. pouch Daring Cajun Pieces
4.5 floury potatoes
1 tsp all-purpose flour
3⁄4 teaspoon salt
1/2 large sweet onion, chopped
1⁄2 red bell pepper, chopped
1⁄2 tsp black pepper
1⁄2 tsp garlic powder
1⁄2 tsp smoked paprika
Breading Ingredients:
1 cup all-purpose flour
1 cup unsweetened plant milk
1 cup breadcrumbs
1/2 tsp salt
frying oil
Method:
1. Heat a pan on high heat, then reduce to medium. Add 1-2 tbsp oil & sear the Daring Cajun Pieces for 2-3 min per side. You’ll know they’re done when golden brown.
2. Remove from heat, & shred with two forks. Set aside.
3. Peel the potatoes & cut in half. Then, in a large stock pot, add water, & boil the potatoes until soft, ~20-25 min. Drain & put into a large bowl.
4. Finely chop onion + red bell pepper, then sauté in a pan over med heat with 1 tbsp oil for 3-5 min (until onion is translucent).
5. Mash the potatoes, then add the shredded Daring + the rest of the dough ingredients & mix everything together until well combined. Let the dough rest until cold enough to handle.
6. Prepare the breading station. Add flour to a bowl, plant milk in a 2nd bowl, & the breadcrumbs + the salt in a 3rd bowl.
7. Form potato dough into 2-inch round balls. Then, roll them first in flour, then in plant milk, & lastly, coat in breadcrumbs. Make sure they are coated on all sides.
8. Heat the frying oil in a medium/small pot. Fill the oil 2 inches high. The croquettes should be able to float in the oil but make sure you don’t fill too much oil into the pot to prevent hot oil from spilling.
9. Once the oil is hot, fry the croquettes in batches until golden & crisp (~1.5 min), turning halfway through to ensure both sides are crisp. Place them on a paper towel to remove excess oil. Enjoy!
