Recipe:
1 x Texas Roots Blue Delight Pumpkin (or similar)
1 x onion
2 x jalapeno peppers
32 oz vegetable broth
3 teaspoons salt
1-2 cups water
Crema & chives for garnish
1) Preheat an oven to 425°F.
2) Cut the pumpkin into wedges, discarding the seeds. Peel the onion and cut in half, and cut the jalapeños in half lengthwise. Place pumpkin, onion and peppers onto a tray cut side down and roast until soft and browned, about 35-45 minutes.
3) Scoop the flesh from the pumpkin and discard the skin. Place pumpkin flesh, onion and peppers in a large pot. Add broth and heat over medium flame. Add salt, then blend until smooth with immersion blender. Add water a little at a time until you reach desired consistency. Taste, add more salt as needed.
4) Serve with a swirl of crema and some chopped chives.
