Many families have an old favorite recipe for cobbler. I’m sharing my dad’s recipe and it’s definitely comfort food. It took a while to get the ingredient amounts right because he never measured them. He used whatever fruit was available and plopped the dough on top haphazardly with a big spoon. But it was always delicious and it came from the heart and that’s what mattered 🧡
RECIPE
6 medium nectarines (about 2 1/4
lbs) peeled, pitted and thickly sliced
2 teaspoons lemon juice
1/2 teaspoon vanilla extract
1 tablespoon cornstarch
1/3 cup brown sugar
1/4 teaspoon cinnamon
1 1/2 cups (8 oz) blueberries
1 cup AP flour
1/2 cup granulated sugar
1 1/2 teaspoons baking powder
1/4 teaspoon salt
5 tablespoons cold butter, cubed
1/3 cup cold sour cream
1 tablespoon cold milk
1 tablespoon coarse sprinkling sugar
🧡 Preheat oven to 400°F. In a large bowl, toss nectarines with lemon juice, vanilla, cornstarch, brown sugar and cinnamon. Fold in blueberries.
🧡 Transfer to a 2 quart greased baking dish. Bake for 10 minutes.
🧡 In a medium bowl whisk together flour, granulated sugar, baking powder and salt. Work butter into flour mixture with the tips of your fingers or with a pastry blender until pea size pieces form.
🧡 Stir in sour cream and milk just until dough forms.
🧡 Remove baking dish from oven. Top fruit with 2-tablespoon size portions of dough. (I used a #40 scoop.) Sprinkle dough with coarse sugar.
🧡 Continue baking until topping is deep golden brown, about 25 minutes. Let cool at least 15 minutes before serving, to allow sauce to thicken.
