Roast chicken with crispy curry leaves is a recipe from @ixta.belfrage’s Mezcla cookbook. By making this recipe I’m fulfilling a promise I made to my friend @sunilskitchen not wait to make this recipe until our big MEZCLA WEEKEND COOKALONG in the weekend of 24 and 25 September.
With this recipe @ixta.belfrage managed to come up with the easiest curry I have ever made. It’s a matter of simply blitzing all the ingredients in a food processor. Then you put this in an oven tray and top it with a spatchcocked chicken. The chicken is marinated in mayonnaise (yes, mayo), curry powder and chili. This is roasted in the oven and topped with briefly fried curry leaves and chili. Hubby also called it the best curry he ever tasted ❤️.
I was planning to use the leftovers to make the Cannelloni enchiladas, but we finished it all 😂😂❤️❤️. And now I need to make a new one so I can make the enchiladas 🙄.
