This triple citrus tomato soup is one of the two ways you can serve this dish from Mezcla by @ixta.belfrage. The other way is a salad where you slice the tomatoes instead of what I did here: blitz them up in a blender and enjoy them as a gazpacho.
I made this a few weeks ago with the most amazing tomatoes I found at our green grocer. As I love a good gazpacho and I’m always curious to try a new recipe. This one definitely didn’t disappoint ❤️❤️.
The triple citrus part consist of tangerine, lemon and lime which gives it a good citrus punch. The aromatics which consist of garlic, ginger, red chili, jalapeño chili and chives give it a nice crunch. The creme fraiche gives it a creamy finish. This will definitely be made again next year in summer 😍😍😍.
