Chicken pot pie season 🥧 🍂 3 cloves garlic 1/2 yellow onion 3 carrots 3 stalks celery 1 potato 1/2 cup frozen peas 3 tbsp butter 1/3 cup flour 2.5 cups chicken broth 1/4 cup cream salt and pepper 1 tsp thyme 3 chicken breasts 2 sheets puff pastry optional: eggwash (1 egg, splash of water) Preheat over to 400 Bring a large pan to medium heat and swirl olive oil and garlic. Add onion, carrot, celery, and potatoes. Saute for 6-8 minutes and add peas. Saute another minute. Add salt, pepper and thyme. Add butter and stir to coat. Add flour and stir until flour melts in. Slowly add broth and stir to thicken. Add heavy cream and stir. Combine mixture and shredded chicken. Defrost puff pastry and roll into a thin layer. Cut pieces however you want, add 1/2-3/4 cup of filling and close. Make sure there is a vent for steam to escape. You can keep them in the freezer like this and cook whenever.
