Gluten Free Tabouleh This is one of the first things I missed once I went gluten free. I’m no historian here and can’t make claims of who made it first, but I will say that this juicy version of Tabulleh is what my mom and grandmother made. Our origins are from Cilicia, Antep, Hadjin.... Ancient Armenia. In its original recipe, cracked wheat is used however since I am gluten intolerant I am using steamed quinoa. Here’s the recipe ⬇️ Steam 1-1.5 cups quinoa (i leave it a little Al dents so it can absorb the juices). 1 tablespoon tomato paste 1 tablespoon red pepper paste Juice of 3 small lemons Salt Pepper Paprika Aleppo pepper 1/4 cup olive oil Set aside and let it all soak in 3 bunches parsley 1 bunch mint 2 bunches scallions 3 cucumbers 2-3 tomatoes Finely minced and add it all together. Serve with romaine lettuce!
