Side Dish Diaries pt 2: Garlic Herb Lamb Chops. These absolutely need to be a regular feature on everyone’s Thanksgiving table & once you try this recipe I’m 100% sure they will be! So tender, so flavorful and paired amazingly with the Mac and cheese. Ingredients: * Rack of lamb, trimmed and cleaned * Salt * Pepper * Cumin * Paprika * Adobo * Garlic Powder * 3 cloves minced garlic * Handful of chopped parsley * 3 tablespoons olive oil * 1/2 stick unsalted butter for basting 1. Pat the rack of lamb dry with paper towels. Slice into individual chops, I keep two pieces to one chop 2. In a bowl, combine salt, pepper, cumin, paprika, adobo, and garlic powder. Add your aromatics ( garlic and parsley). Rub the seasoning mix evenly all over the lamb. 3. Heat a stainless steel pan over medium-high heat. Once hot, add olive oil. Sear the lamb for about 2–3 minutes per side, or until a deep golden crust forms. 4. Reduce heat slightly and add butter to the pan. As the butter melts, spoon it over the lamb repeatedly to baste, infusing it with flavor. 5. Transfer the entire pan to a preheated 350°F oven. Roast until you reach an internal temp of 140° F for medium doneness ( about 15 minutes). 6. Remove from the oven and let the lamb rest for about 5 minutes to retain its juices.
