In case anyone wants to make Japanese soufflé pancakes (with or without oni faces), here you go! Recipe is not on the blog YET, but here’s a sneak peek. Makes 10-ish pancakes! Ingredients: 4 eggs separated 1/4 cup sugar 1/2 cup cake flour 1/2 tsp baking powder Pinch of salt 3 tbsp whole milk 1/2 tsp vanilla extract Water for cooking Method: Mix egg yolks, milk, vanilla. Add flour, baking powder, and salt. Mix well and set aside. Beat egg whites and sugar to stiff peaks Set cast iron on low heat and add butter Fold batters together Use 2 tbsp cookie scoop and scoop 4 onto cast iron. Then scoop one more on top of each. Put tbsp water in pan, cover and cook 2 mins. Uncover and add another scoop to each pancake. Cover again and cook another 5-6 mins. By that time, the bottom of the pancake should be golden brown. If it’s not, increase the heat a little. Gently flip pancakes.
